Ingredients
- 50 gr butter
- 1 tablespoon olive oil
- 1 clove garlic
- 1 medium onion
- 500 gr pumpkin pulp
- 100 gr carrots
- 100 ml 18% cream
- 400 ml water
- 50 gr dark chocolate
- 1 teaspoon chili
- 1 teaspoon cinnamon
- salt and pepper
Instructions:
- Chop the onion and garlic and sauté them in 20g of butter.
- Cut the pumpkin and carrot into large cubes and brown them in another bowl with the remaining butter and olive oil.
- Add the sautéed onion and garlic to the bowl with the pumpkin and cover for 20 minutes until the pumpkin becomes soft.
- Add chili and water - boil for about 5-10 minutes.
- Finish preparing the soup with cream, salt, and pepper, then blend the soup. For a smoother result, strain the soup through a sieve.
- Serve the soup with grated chocolate and pumpkin seeds - (I added flax and sesame seeds).
