A super simple and delicious recipe from common ingredients that can be easily varied.
It's a perfect appetizer; we even had it for lunch. I believe they can beautifully decorate a holiday table and also be a great accompaniment to grilled fish.
What's certain is that tomatoes at this time of year are so good it's a shame to miss out on nature's delights.
Ingredients (for 2 servings)
- 2 tomatoes
- 2 large tablespoons olive oil
- 1/4 cup couscous
- 10-12 raisins
- a few nuts of your choice (pine nuts are best suited)
- salt and pepper
- spices - mint, saffron, rosemary
- a small cube of butter
Method
- Preheat the oven to 200 degrees C.
- Scoop out the pulp from the tomatoes and chop it finely.
- Pour a little water over the couscous, add a cube of butter, stir, and let sit for 5 minutes.
- Fry the raisins, nuts, and chopped tomatoes in olive oil, add the spices, and season with salt and pepper.
- Add the couscous and fill the tomatoes with the mixture.
- Bake for 15-20 minutes.
