Ice cream is the dessert of childhood and summer. We can hardly imagine a summer without ice cream. Although we sometimes hesitate to consume it in excess due to the ingredients, we will still say yes more often than no when cravings strike.
We recommend 3 ice cream recipes with exclusively plant-based ingredients, but with a delicious taste.
See below.
Raw Raspberry Ice Cream

Ingredients:
3-4 cups fresh or frozen raspberries;
2 cups sliced bananas, frozen;
2 tablespoons coconut butter;
1 tablespoon agave syrup or honey.
Preparation:
Put all ingredients into a blender and mix until a creamy, smooth texture is obtained. Keep the mixture in the freezer until it hardens.
Finally, decorate with mint leaves and fresh raspberries or any other fruits you like.
Raw Peach Ice Cream

Ingredients:
1 and a half cups pitted peaches;
2 cups almond milk;
2 cups coconut flakes;
¾ cup honey;
2 teaspoons vanilla extract;
2 tablespoons coconut oil;
½ teaspoon cinnamon;
a pinch of salt.
Preparation:
Put all ingredients into a blender and mix for 3-5 minutes until a creamy texture is obtained. Subsequently, the mixture should be kept in the freezer until it hardens.
For extra flavor, decorate with fresh peaches.
Raw Tahini Ice Cream with Raisins and Rum

Ingredients:
2 cups cashews, hydrated for 2-4 hours;
2 cups coconut flakes;
1 cup almond milk;
2 cups raisins;
¾ cup agave syrup;
¼ cup tahini;
1 tablespoon vanilla extract;
1 pinch Himalayan salt;
natural rum essence.
Preparation:
Soak half of the raisins in rum overnight. Put the other ingredients, along with the remaining raisins, into a blender and mix at high speed until a creamy consistency is achieved.
Keep the mixture in the refrigerator until it hardens, then decorate with the rum-soaked raisins. Depending on your preferences, you can also add toasted almond flakes or pistachios.
And because we've prepared such delicious recipes, while they're chilling in the fridge, we encourage you to visit our website www.eclair.md, where you'll find tools for preparation and serving (and as we know, serving accounts for half the success of the meal).
Enjoy your meal!
