Gallete de Rois is a traditional French tart, prepared during the Christmas holidays. Its roots trace back to the 14th century, and it is served in honor of the 3 Magi who came from the 3 continents. There are many traditions surrounding it, from different fillings to hidden coins for lucky guests.
Ingredients:
125 g unsalted butter, softened
125 g granulated sugar
2 eggs, plus 1 egg for brushing the tart
125 g almond flour
125 g dark chocolate (approx. 50% cocoa)
500 g ready-made puff pastry
1. Preheat oven to 190°C. Line a large baking sheet with parchment paper.
2. Cream the butter and sugar in a food processor or with an electric mixer for about 5 minutes or until light and fluffy. Add the eggs and almond flour, then mix well. Melt the chocolate then add it.
3. Divide the puff pastry in half and roll out each piece thinly on a lightly floured surface. Cut 2 discs using a large salad bowl with a diameter of approximately
30 cm. Extend one of the discs so that its diameter is approximately 1 cm larger than that of the second disc.
4. Spread the chocolate and almond cream on the smaller pastry disc, leaving a margin of approximately 3 cm.
Assembly
1. Brush the edges of the pastry with a little cold water, cover with the second pastry disc and press on the edges to seal the pastry discs.
2. Beat the egg and brush it over the top of the pastry. With the back of a small knife, draw a simple pattern of your choice on the pastry.
For a traditional pattern, form circular arcs from the center.
3. Bake in the oven for 35 to 45 minutes, or until the tart is beautifully puffed and golden. Galette des Rois is eaten with champagne... Traditions are good!
To vary the taste, simply add a little finely grated orange zest to the chocolate-almond mixture or replace the powdered almonds with another ground nut.
