
Ingredients:
for 5 ramekins
500 ml heavy cream 35%
5 egg yolks
50 g granulated sugar (plus for burning)
3 tablespoons Oriental Pistachio Kiss tea, Kami no Kisu

Preheat the oven to 150 C. In a saucepan, mix the tea and heavy cream, heat over medium heat until 80-90 C, it is important not to bring to a boil. Remove the saucepan from the stove and let it sit for 15 minutes.
In a bowl, beat the egg yolks with the sugar, gradually add them to the strained cream with the tea.
Pour the mixture into molds and place them in a water bath in the oven for 30-40 minutes until set, but the center of the cream is still soft.
Let the cream cool, cover it with foil and put the ramekins in the refrigerator for at least 2 hours.
Before serving, cover the cream with sugar and brown the sugar with a kitchen torch for one minute, serve immediately.
