This brownie is one of our favorites. Not all vegetable-based desserts are successful, but this recipe is definitely worth trying; it has an amazing texture.
Ingredients:
- 2 cups grated zucchini
- 1 large egg
- 1/2 cup melted butter or coconut oil
- 1/2 cup liquid sweetener, I used date syrup, you can also use honey
- 1 teaspoon vanilla extract
- 1/2 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup whole wheat flour
Instructions:
- Grate the zucchini and place it in a colander to drain any excess liquid.
- Melt the butter and mix it with the sweetener, vanilla, and egg.
- In another bowl, combine the dry ingredients and gradually mix with the liquid mixture.
- Add the zucchini, mix, and pour the mixture into a brownie baking pan.
- Bake for 25-30 minutes at 180 C.
