Maslenitsa - is an ancient Slavic holiday, lasting one week before Lent and ending on Forgiveness Sunday. The holiday symbolizes the farewell to winter, but in Christian canons, it is a preparation for Lent: communicating with family and friends, good deeds, forgiveness of sins. There was a tradition to give the first pancake fried to a beggar for the remembrance of the deceased.
Why did pancakes become a major delicacy at Maslenitsa? Because it is warm, round, and yellow - like the sun, this symbol of warmth and light is necessary to attract, thus bringing the arrival of spring and chasing away winter.
