A festive feast must end with tea and a delicious dessert, which everyone usually looks forward to, asking: "What do we have for dessert?" We have pudding, we really like the English classic, but this year we wanted to opt for a healthier recipe.
I suggest baking 2 cakes at once; everyone will be looking for the second one the next morning.

Ingredients:
- 100 g almond flour
- 200 g wheat flour, preferably gluten-free
- 300 g coconut sugar
- 1 tablespoon chia seeds
- 1 small teaspoon baking soda
- 1 small teaspoon baking powder
- 100 ml almond or coconut milk
- 8 large tablespoons coconut oil
- 5 large tablespoons cocoa powder
- 50 g raisins
- 50 g chopped hazelnuts
- 200 g chocolate
Preparation method:
Preheat the oven to 180 C and grease the pudding bowl with coconut oil. If you don't have an oven-safe bowl, a 20 cm cake tin will also work.
Place the chia seeds in a bowl with 4 tablespoons of water and let them sit for 10 minutes.
In a bowl, mix the almond flour, sugar, wheat flour, baking powder, baking soda, and cocoa powder. Add the milk and melted coconut oil. Once you obtain a homogeneous mixture, add the raisins and hazelnuts.
Pour the mixture into the baking tin and bake for about 75 - 90 minutes. It should be a little soft inside, but a knife inserted into the center should come out clean. If not, bake for another 5 - 10 minutes. For the last 30 minutes of baking, cover the pudding with foil so that it bakes through and doesn't burn on top.
After baking, let it cool, melt the chocolate and pour it over the pudding, decorate with fruit, nuts, or rosemary sprigs.
