My dears, today is a wonderful day and I have several reasons to be happy. The first is that I'm starting to see spinach for sale more and more often, and I love it, especially in this recipe which is a family tradition. The second is the sunshine, and the third is this wonderful breakfast that brightens your whole day.
What I really like about this recipe is its versatility; I can add anything that comes to mind: nuts or breadcrumbs crushed in a mortar, spices, herbs (a must), cherry tomatoes, and so on. It is extremely easy and loved by everyone.
Ingredients
for 2 servings
- a box of spinach (about 250 g)
- 2 eggs (can be more)
- a sprig of rosemary
- 30-50 ml 10% cream
- chives sprouts
- salt and freshly ground pepper
Preparation method
- Preheat the oven to 180 C.
- Blanch the spinach for 2 minutes in a bowl of boiling water. Drain well.
- Finely chop the rosemary and grease the baking dish with butter. Then add the spinach, cream, and sprinkle with salt, pepper, and rosemary.
- Bake for 14 minutes (until the egg whites set)
- Serve with crispy bread.
